GLUTEN-FREE

Verify every label.

Use certified-gluten-free BBQ sauce and verify the cooked chicken, cheese, yogurt, seasonings, and toppings. Keep clean tools and serving surfaces separate from gluten-containing foods.

ALLERGEN CHECK

Milk, egg + soy paths are clear.

Cheddar and Greek yogurt contain milk. The base recipe has no egg, but BBQ sauce, cooked chicken, dairy alternatives, and toppings can vary. Check for egg and soy and manage cross-contact for the athlete eating the meal. No online recipe can guarantee medical safety.

THE GAME PLAN

Let's Cook

  1. 01

    Heat the oven

Preheat the oven to 425°F. Use 1 potato pan and 1 separate chicken pan. Keep raw chicken and potatoes on separate pans, and never load more than 2 pounds of chicken on one pan. Line only the chicken pan with foil or parchment if you want easier cleanup.

  2. 02

    Start the potatoes

Scrub and fully dry all 4 potatoes. Pierce each 5–6 times, coat with the scaled potato oil and salt, and bake uncovered on 1 pan with room for air to move. Never use foil.

  3. 03

    Build the topping station

Measure the BBQ sauce, cheddar, Greek yogurt, and optional toppings. Keep cool toppings refrigerated until serving.

  4. 04

    Season the raw chicken

Spread 24 ounces or 1½ pounds of raw chicken in one uncrowded layer across 1 separate chicken pan. Add the scaled chicken oil, salt, garlic powder, smoked paprika, and pepper. Never wash raw chicken; wash your hands and clean every surface it touched.

  5. 05

    Roast and verify the chicken

Roast the chicken, then insert an instant-read thermometer into the thickest part of every questionable piece. Time and color do not prove doneness. You must confirm 165°F before continuing.

  6. 06

    Rest the chicken

Move the safely cooked chicken to a clean bowl and let it rest for 5 minutes before shredding.

  7. 07

    Shred and sauce

Shred with two clean forks and stir in the scaled BBQ sauce. If the chicken has cooled, reheat the sauced chicken to 165°F before serving.

  8. 08

    Check the potatoes

At about 50 minutes total, look for crisp skin and a center that gives easily to a fork. If the center is firm, bake 5 minutes more and check again.

  9. 09

    Open and fluff safely

Use oven mitts to steady each hot potato. Slice lengthwise, gently squeeze the ends, and fluff the center with a fork.

  10. 10

    Load the potatoes

Top each potato with BBQ chicken, cheddar, Greek yogurt, and optional toppings. For melted cheese, return the loaded potatoes to the oven before adding cool toppings.

FIRST-POTATO STRATEGY

Build the base first.

Start with a fluffy potato, BBQ chicken, cheddar, and a small spoonful of Greek yogurt. Put optional toppings on the side so the first bite stays familiar.

TRAINING-DAY UPGRADE

Already a strong meal.

This is already a strong post-training meal. After an especially long session, add black beans, corn, fruit, or milk for more total energy and recovery fuel.

MAKE IT YOURS

One meal. Plenty of options.

Keep it familiar

Serve the toppings separately and let each athlete build a plain or fully loaded potato.

Smokier BBQ

Choose a smoky BBQ sauce or add a pinch of smoked paprika to the finished chicken.

Bring the heat

Add jalapeños or hot sauce at the table.

Add vegetables

Offer corn, chopped tomatoes, or a simple side salad.

Use chicken thighs

Boneless, skinless thighs work well; cook every piece to 165°F.

Dairy-free

Use verified dairy-free cheddar and yogurt alternatives, or skip both.

Gluten-free

Use certified-gluten-free BBQ sauce and verify every packaged ingredient.

Extra-crisp skin

Dry the potatoes thoroughly, keep them uncovered, and give them breathing room on the pan.

THE LEFTOVER MOVE

Run it back without repeating dinner.

Store potatoes, chicken, and cold toppings separately when possible. Turn the chicken into a rice bowl, quesadilla, sandwich, nachos, or tacos. Refrigerate within 2 hours—or 1 hour above 90°F—use within 3–4 days, and reheat chicken and leftovers to 165°F.
