Grocery List

4 people · full total

Dry pasta and cottage cheese commonly come in 16-ounce boxes and tubs: approximately one of each per four people. Buy whole packages; measure the recipe amounts above.

Optional table toppings

Peas, cooked broccoli, black pepper, hot sauce, toasted panko (standard panko contains wheat), or safely reheated chicken. Add-ins change the nutrition estimates.

SMOOTH SAUCE, SMALL UNITS

Your Cooking Plan

Exact quantities for every pot. No oversized final batch.

Unit 1 · 4 servings
  • 1 pound dry elbow macaroni
  • 2 cups low-fat cottage cheese, preferably small-curd
  • 1½ cups 2% ultrafiltered milk
  • 6 ounces sharp cheddar cheese, freshly shredded (about 1½ cups, lightly packed; weight is authoritative)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon smoked paprika, optional
  • ½ teaspoon kosher salt for the sauce, plus more for the pasta water; taste before adding more salt
  • ¼ teaspoon black pepper
  • Up to 1 cup reserved pasta water (maximum to reserve; add only as needed)

THE CREAMY BASE

Cold blend. Gentle heat.

Low-fat cottage cheese brings body and protein. Full-fat works too; nonfat can taste tangier. Ultrafiltered milk gives the default protein estimate. Regular 2% milk works with less protein. Blend only cold dairy; never seal hot sauce in a blender.

SMALL DETAILS

Grate it. Save the water.

Sharp cheddar gives more flavor per ounce; a block melts most smoothly. Shells or cavatappi work too. Follow the pasta’s texture and package timing. Dijon sharpens the cheese flavor and may be omitted. Starchy water loosens sauce: add it gradually, not all at once.

THE GAME PLAN

Let’s Cook

Showing Unit 1 · 4 servings. Repeat the method with each unit’s own quantities.

  1. 01

    Set up the station

Set up this 4-serving unit: fill a 5- to 6-quart pot with water and set a colander in the sink. Shred 6 ounces sharp cheddar, and measure 2 tablespoons butter and 2 tablespoons all-purpose flour. Keep cottage cheese, milk, butter, and cheddar refrigerated until needed.

  2. 02

    Boil and season

Bring the water to a full boil, salt it until lightly seasoned, and add 1 pound dry elbow macaroni. Stir immediately and several times during cooking so it does not stick. The package’s earliest listed time is 8 minutes: set the first taste check for 7 minutes. The timer is a prompt to taste a noodle, not proof the pasta is done; repeat with +30 seconds or +1 minute as needed.

  3. 03

    Blend the protein base

While the pasta cooks, blend 2 cups cold low-fat cottage cheese, 1½ cups cold 2% ultrafiltered milk, and 1 teaspoon Dijon mustard; 1 teaspoon garlic powder; ½ teaspoon onion powder; ¼ teaspoon smoked paprika, optional; ½ teaspoon kosher salt for the sauce, plus more for the pasta water; taste before adding more salt; ¼ teaspoon black pepper until completely smooth, about 30–45 seconds. Blend only the cold base; never seal or blend a hot dairy mixture.

    BUILT-IN TIMER IN COOKING MODE
  4. 04

    Check and drain

Start tasting the pasta one minute before the package’s earliest listed time (7 minutes for this package). When it is just tender with a little bite, scoop out up to 1 cup pasta water for this unit, then drain. This is the maximum to reserve, not an amount you must add. Do not rinse the pasta. Use oven mitts and two hands, pour away from your body, and have an adult drain the pot if you cannot safely lift it.

  5. 05

    Build the roux

Return the empty pot to medium-low heat. Melt 2 tablespoons butter, whisk in 2 tablespoons all-purpose flour, and cook for 1 minute while whisking. Confirm that the roux looks smooth and foamy, not dark brown, before continuing.

  6. 06

    Thicken gently

Slowly pour in this unit’s cold blended sauce base while whisking. Keep the heat at medium-low and whisk for about 3–5 minutes, scraping the bottom and corners. The 4-minute timer is a check: confirm the sauce is steaming and lightly coats the back of a spoon; use +1 minute if needed. Do not let it boil hard.

  7. 07

    Melt the cheddar off heat

Turn off the burner and move the pot off the heat. Add 6 ounces freshly shredded sharp cheddar in three small additions, whisking until each addition is smooth before adding the next. If it looks very thick, whisk in warm reserved pasta water 1 tablespoon at a time. Confirm the heat is off and the cheese is melted smoothly before continuing.

  8. 08

    Finish the mac

Fold this unit’s drained pasta (1 pound dry before cooking) into its sauce. Stir for about 1–2 minutes until every noodle is coated. Add reserved pasta water a little at a time only if needed; stop when the sauce is glossy and slightly looser than the final texture you want. Confirm that texture before continuing.

  9. 09

    Rest, taste, and serve

Let this 4-serving unit rest for 2 minutes; it will thicken. Taste before adding more salt. Spoon it into 4 bowls and serve optional add-ons at the table.

Need Help? · Sauce rescue
Too thick
Whisk in warm reserved pasta water 1 tablespoon at a time.
Too thin
Keep the sauce at low heat for 1–2 more minutes before adding the cheese, or let the finished mac rest for 2–3 minutes.
Cheese is clumping
Remove the pot from heat, whisk steadily, and add a small splash of warm pasta water. Do not turn the heat higher.
Sauce looks grainy
Take it off heat immediately, whisk in 1–2 tablespoons warm pasta water, and stop adding cheese until smooth.
Forgot the pasta water
Use warm milk 1 tablespoon at a time.
Pasta finished early
Do not rinse it; keep it in the colander only for the few minutes needed to finish the sauce.

ALLERGEN + SUBSTITUTION NOTES

Check every label.

For gluten-free mac, use certified-gluten-free short pasta and a 1:1 gluten-free all-purpose flour blend. Use separate clean water, pots, colanders, utensils, and serving dishes. Cook the gluten-free version first in the clean workspace.

Lactose-free cottage cheese and milk may suit lactose-aware cooks. Lactose-free is not milk-allergy-safe.

A fully dairy-free version needs milk-free cottage-cheese-style or yogurt alternatives, milk, butter, and melting cheese. Texture and protein change substantially; the default high-protein claim and all nutrition estimates on this page do not apply to those replacements.

FIRST-BOWL STRATEGY

Start familiar.

Start with a small bowl of plain mac. Keep peas, broccoli, pepper, hot sauce, and crunch on the side. Try one small add-on only if you want; the rep is cooking the meal.

TRAINING-DAY UPGRADE

Fuel your practice.

This bowl already brings a strong recovery combination of protein and carbohydrates. After a long or especially hard session, add fruit and water or milk alongside it. For more color and fiber, stir frozen peas into the pasta during its final 2 minutes or serve roasted broccoli on the side.

MAKE IT YOURS

Your bowl. Your finish.

Extra classic

Add a little more black pepper at the table.

Green rep

Stir frozen peas into the pasta during the final 2 minutes of cooking.

Broccoli mac

Fold small cooked broccoli florets into the pasta and sauce.

Buffalo bowl

Add hot sauce to an individual bowl, not the full pot.

Crunchy top

Add toasted panko to each bowl. Standard panko contains wheat.

Chicken mac

Fold in warmed chopped chicken. Reheat previously cooked chicken to 165°F; nutrition changes.

MONDAY LEFTOVER MOVE

Run it back.

Add 1–2 tablespoons milk or water per serving, cover loosely, and microwave for 60 seconds. Stir, then continue in 30-second rounds until the center reaches 165°F. Refrigerate in shallow containers within 2 hours, or 1 hour above 90°F. Use refrigerated leftovers within 3–4 days. Do not rely on smell or appearance to judge improperly stored food.

Keep dairy refrigerated until needed. Cover leftovers loosely and stir between heating intervals so the center heats evenly.
