Heat the oven
Preheat the oven to 425°F and lightly grease 1 large rimmed sheet pan.

Choose your seasoning
Mix the chili powder, cumin, smoked paprika, garlic powder, and kosher salt in a small bowl.

Chop the vegetables
Remove the pepper seeds, then cut the peppers and onion into a small ¼-inch dice; smaller pieces will soften and blend into the chicken.

Give the vegetables a head start
Toss the vegetables with half of the olive oil, the honey, and about one-quarter of the seasoning; spread everything into one layer and roast for 8 minutes. Use 1 large rimmed sheet pan and keep everything in one uncrowded layer.

Prepare the chicken
While the vegetables roast, cut the chicken into small, bite-sized pieces. Chop the vegetables first, use a separate clean board for the chicken when available, wash your hands and tools afterward, and never rinse raw chicken.

Season the chicken
Toss the chicken with the remaining olive oil and remaining seasoning until evenly coated.

Finish roasting
Stir the chicken into the vegetables and spread everything into one layer; roast for another 14–18 minutes, stirring halfway through, until the thickest chicken pieces reach 165°F. Use 1 large rimmed sheet pan and keep everything in one uncrowded layer.

FIRST-TACO STRATEGY
Make the first bite easy.
Start with a smaller scoop of the complete filling and add cheese, salsa, or another familiar topping. The goal isn’t to conquer a pile of vegetables—it’s to discover that well-cooked vegetables can make the chicken taste even better.
TRAINING-DAY UPGRADE
Turn up the fuel.
After a hard practice, add rice or black beans for more carbohydrates and total fuel. Greek yogurt provides a cool, creamy topping with additional protein.
