Make the sauce
Stir the scaled Greek yogurt, mayonnaise, ketchup, mustard, and pickle juice together until smooth, then refrigerate it while you cook.

Build the topping station
Shred the lettuce, finely chop the pickles, and very finely dice the optional onion; keep all toppings separate so everyone can build their own tacos. If using corn tortillas, warm them for 20–30 seconds so they flex without cracking.

Set up a clean landing zone

Portion and season the beef
Divide 24 ounces of beef into 12 loose 2-ounce balls. Sprinkle the scaled salt, garlic powder, and pepper evenly over them. Do not knead or pack the meat tightly. Wash your hands and anything that touched raw beef with hot, soapy water.

Heat the pan
Place the skillet over medium-high heat for 2–3 minutes, then add a very light coating of neutral oil or cooking spray.

Smash and sear
Cook up to 2 tacos at a time. Place one or two beef portions in the skillet with room between them, immediately lay one tortilla over each portion, and press firmly through the tortilla for 10 seconds until the beef spreads nearly as wide as the tortilla. Leave the tacos meat-side down without moving them for about 2½ minutes.

Flip, melt, and check
Flip each taco, add a heaping tablespoon of cheese, and cook tortilla-side down for 1–1½ minutes. Insert an instant-read thermometer sideways into the center of the thin beef layer; it must reach 160°F. If it is low, cook meat-side down for another 30 seconds and check again.

Repeat the reps
Move each finished batch to the clean plate or warm sheet pan, then repeat for 6 total batches. Remove excess grease or burnt bits between batches and add oil only when the pan looks dry.

Finish and build
Spoon burger sauce over each taco—or add ketchup and mustard—then finish with lettuce, pickles, and optional onion.
